Lasagna doesn't have to be just for Gluten Eaters anymore!

This is our family friend's recipe for Lasagna that we have used for years.  It was always a staple growing up.   This is one of those meals that tastes better the day after, too!

What You Need:
- 1 lb ground beef
- 1 box Gluten Free lasagna noodles - I used De Boles 
- 2 eggs
- 32 oz red pasta sauce
- 3 cups ricotta/ cottage cheese - a mixture of the 2 works best
- 1/2 cup parmesan cheese
- 2 cups shredded mozzarella cheese
- salt and pepper

How to Make It: 
Heat oven to 375.  Brown beef, drain fat and heat with red pasta sauce.  Mix eggs, ricotta/cottage cheese, parmesan and salt and pepper.  In a 9x12 or 2 9x9 pans layer uncooked lasagna noodles, cheese mixture, meat/ sauce mixture, mozzarella cheese and repeat.  Cover with remaining mozzarella cheese.  Cover with foil and bake for 40 minutes.  Let set for 10 minutes then serve.

I made 2 9x9 pans this time.  We ate one and froze one for later.   Since I was using Gluten Free pasta I cooked the one I froze for 30 minutes.  I let it cool completely than froze it.

Gluten Free Apple Pie

I love fall!  The weather is perfect, I love the leaves changing colors and I love apples!  Here is a simple and Gluten Free way to make and enjoy Apple Pie!  The recipe needed very little changes to make it Celiac friendly!

Yes!  It did taste as good as it looks!

What you Need:
- 1 Gluten Free Pie crust - I used the Whole Foods brand
- 3 to 4 Large apples peeled, cored, and sliced - I used Gala because I like sweeter apples
- 1/2 cup white sugar
- 1 tsp cinnamon
- 1/4 cup brown sugar

- 3/4 cup GF flour - I used Jules
- 1/3 cup white sugar
- 1/3 cup brown sugar
- 6 tbsp cold butter

How to Make It:
Heat oven to 400.  Mix apples and other ingredients together.  Fill pie crust with apple/ sugar mixture.  Mix sugar and flour together for topping.  Cut in butter, I used my fingers to mix it in.  Top the apple mixture with the topping.  Bake for 35 minutes.  Let cool 10 minutes then serve.

We ate it with cool whip but ice cream would be great also!  I hope you enjoy this apple pie as much as we did!

Gluten Free Angel Food Cake - Recipe Review

One of my favorite Gluten Free Bloggers is Jenny from Gluten Free Birmingham!  She has a daughter with Celiac and does a great job of posting recipes and GF product deals.

A little while ago she posted this recipe for Angel Food Cake.  I love angel food cake but have never made it before (even in my Gluten eating life).

I decided to cut the recipe in half and make cupcakes instead of a traditional bunt cake shape.   It made about 18 cupcakes.  They only took 15 minutes to cook as cupcakes.   Make sure you vary your cooking time based on what you cook them in.  Make sure you sift everything as instructed!

The recipe is super simple and came out great!  Using pre-mixed GF flours like Pamela's is a real time saver for me!

The Gluten loving hubby downed them!  I think they would go great with some fresh fruit and whip cream.

Bad Daddy's Burger Bar Breakfast Review

During our trip to Charlotte, NC we did a little Google search for Gluten Free breakfast and came up with Bad Daddy's Burger Bar.

It was a beautiful day so we decided to sit outside on their patio.  They only serve breakfast on the weekends but have a full Gluten Free menu for lunch and dinner as well.

After talking to the waitress I decided to go with a three egg omelet, grits and fruit bowl.   It was a ton of very tasty food.  I actually skipped lunch because it was so much.

The hubby had the breakfast burger and potatoes.  He said it was very good.

Bad Daddy's was fun and had great food.  The next time we go I hope to be able to try one of their Gluten Free burgers.

Time to Re-Fuel

The hubby and I ran away for a night to Charlotte, NC for a quick getaway before the babies arrive.  The toddler played with Grandma so it was just the 2 of us.

After tasting the most amazing Gluten Free pizza at the Expo this past May I knew Fuel Pizza was a must visit for dinner while in Charlotte.  We decided to go to the original location for the full experience and it happened to be about 7 minutes from our hotel.

They have a big Gluten Free menu with AMAZING pizza!  The crust is thin and has a great taste.  It isn't too sweet like some Gluten Free pizza dough.  The Gluten Free pizza only comes in a 12 inch size pie.

I decided to go with the Gluten Free Lasagna Pizza - delicious!  The ricotta cheese added a nice smooth sweetness.  The sauce and cheese were perfect.

I would like to say I shared it with the hubby or saved some for a snack later but the truth is I ate the whole thing by myself!

If you are ever in the area I strongly suggest giving Fuel a try for super yummy Gluten Free pizza!

Special K Protein Shakes are Gluten Free

Recently I have felt the need to increase my daily protein intake - 30 plus weeks pregnant with twins is the main motivation.  So after looking around I found some other moms suggesting protein shakes.   As a Celiac there is so much that could go into these shakes that would make them not safe.

After looking at the Kellogg's website I still wasn't sure their Protein Shakes were safe, so I emailed them.  A couple days later here is their response!

I'm always amazed when a big company takes time to actually response to customer emails and tweets.

I know they market their shakes to be weight loss aides, but they can be useful for getting good protein and fiber.

With the confidence that they were safe I went out today and bought some Strawberry flavored protein shakes.  And I have to say it was pretty tasty!  It did fill me up for longer that 20 minutes (my current hunger rate) and had a bunch of good stuff in it for me and the twins.  I can see continuing to drink them once the babies arrive to keep my calories, protein, and fiber up while nursing.

So in case you where wondering: YES Kellogg's Special K Protein Shakes are Gluten Free!

Baked Pork Chops

We have been in a chicken and beef for protein rut in our house for longer than I want to admit.  So when I hit the grocery store this week I was determined to pick up some other kind of meat!  I decided to go with pork chops and figure out what to do with them later.  After looking around I found a marinated baked pork chop recipe that only needed small modifications to make Gluten Free!

And to be honest my hubby followed the recipe and made dinner while I was at work!  They came out great!  Not the hard, chewy pork chops I remember from long ago.  The sauce was very flavorful and really accented the pork!

What You Need:
1 tbsp GF Soy sauce
1 tbsp Worcestershire sauce
2 tbsp vegetable oil
1 tsp lemon juice
2 tbsp brown sugar
2 tbsp ketchup
4-6 pork chops

How to Make It:
Heat oven to 350.  Mix sauces together in a bowl.  Put a small amount of sauce on the bottom of baking dish.  Place pork chops on top and cover with half of the marinade.  Cook for 30 minutes.  Take out of oven, flip pork chops and cover with remaining sauce.  Cook for an additional 15 minutes.

We enjoyed ours with mashed potatos and veggies.  This will be a great additional to our menu rotation!
