This is a hardy meal for a cool evening. It is super easy to make and easily customizable to fit your families taste. I love one dish meals!
I call it a non-stew because it is basically everything that would go in a beef stew except the broth.
What you Need:
1 lb ground beef
1 can green beans
1 pound potatoes, cubed
1/2 cup chopped carrots
2 GF beef bouillon cubes
1.5 to 2 cups water
How to Make it:
Brown beef in skillet, drain. Add potatoes, veggies, bouilon and water. You want to add just enough water to cover the meat and veggies. Cover and cook on low to medium heat for 30 minutes. When the potatoes are cooked you are ready to go!
I served mine with GF Bloomfield Farms corn muffin, cheese and sour cream. Onion or green peppers and even corn would be great in this as well!

Bloomfield Farms Pizza Dough
I'm still working my way through the huge box of Bloomfield Farms products! I decided to try the pizza dough the other night. I have only attempted to make my own Gluten Free pizza once before and I have to say it didn't go well. The act of rolling out dough is not something I do often due to time and kids.
I decided to follow the directions for the thin crust pizza and made two 9" pies. One I topped with pepperoni and the other BBQ Chicken!
The dough was actually pretty easy to prepare. I only deviated by making two smaller balls of dough instead of one big ball. Other than that I followed the instructions on the box. Once the dough is ready you bake it for 10 minutes, let it cool, then add toppings and bake for another 10 minutes.
The end result was a tasty thin pizza crust. It had a nice crunch and it held up well to the toppings without getting soggy. Next time I'm going to try the thick crust recipe and let the dough rise to see how it does!

Gluten Free Corn Dog Muffins
Corn Dogs = yummy! I have seen a couple Gluten Free corn dog recipes that were more traditional but this recipe caught my eye. The only change to make it Gluten Free was to use Gluten Free corn mix.
What you need:
GF Corn muffin mix (I used Bloomfield Farms mix!)
3 hot dogs
How to Make it:
Heat oven to 400 degrees. Spray mini-muffin pan with cooking oil. Mix corn muffin mix as directed. I followed the directions to make 6 regular size muffins and it was perfect to make 16 mini-muffins. Cut hot dogs into small 1 inch pieces (I had 6 pieces per hot dog). Fill muffin tins half full with corn mix and place hot dog in the center.
Bake at 400 for 9 minutes. Serve with the dip of your choice.
Tips:
Do not overfill the tins, once you put in the hot dog the corn mix will be the right height. Cut off the rounded ends of the hot dogs so the pieces will stand up better. You could easily increase this recipe to meet your needs.

So Lucky Gluten Free Gift Baskets
As a Gluten Free person when it comes to food, life is a little more difficult. That also carries over to food gifts. In the corporate world I'm often given food gifts from vendors like donuts, pastries, breads, etc. that I can't eat. My co-workers happily eat my gifts while I dream of getting food I can actually eat! I recently discovered a company who can fill the food gift gap for Gluten Free eaters!

So Lucky Gifts has a number of great Gluten Free gift boxes for almost any occasion. The company was started by three friends, one of which has Celiac Disease who "was frustrated by the lack of selection available for gourmet gluten-free food and gifts with style and charm." They find gourmet Gluten Free products and pair them together to create gift boxes ranging from a Gluten Free Starter Kit to Seasonal Gift boxes to the So You're Traveling box.
I had the opportunity to try the So You Like Breadsticks box. It came with 3 boxes of Chebe Garlic Onion Breadstick Mix, an Italian herb mix and a garlic salt packet from Salt Sisters. The gift box was beautifully wrapped and decorated, even down to the little details!
When I first opened the box I thought, "I'll make Gluten Free pasta with breadsticks." However my pantry was lacking a few items to make that happen so I switched gears. With the Super Bowl last Sunday I wanted to make a fun appetizer and decided on pigs in a blanket. I followed the directions on the box for the breadsticks but instead of making all breadsticks I wrapped pieces of hot dog in a couple. I baked them according to the time specified and viola Gluten Free pigs in a blanket! The uneaten breadsticks I put in the fridge.
Monday night I made pizza so the leftover breadsticks were a perfect fit. I decided to mix some EVOO and the garlic salt together and brush onto the breadsticks before I heated them up in the toaster oven. They came out super tasty even on day two!
I has used the italian herb mix in a few dishes in the past week to include pizza, Quinoa pizza treats and pepperoni pasta bake. It is very versatile and has added great flavor. I'm looking forward to trying it on other dishes.
Overall I was pleasantly surprised how versatile items in the gift box have been. I wish my vendors would send me So Lucky gift boxes instead of donuts!

Gluten Free Peanut Butter Mug Cake
It's late, the kids and hubby are in bed and I want something sweet! I ate all the Gluten Free cookies so I have nothing. I don't want to spend an hour making cookies or brownies or something. So thanks to Pinterest I decide to try a Mug Cake. I was skeptical but willing to try anything at this point. To make this Gluten Free all I had to do was substitute Gluten Free flour.

Seriously life changing! Single serve Gluten Free dessert that literally took me 8 minutes to assemble, mix, and bake. Can't wait to try some of the other recipes and experiment with my own!
Next time I'm hungry at 3am - making this!

RECIPE FROM KIRBIE'S CRAVINGS
Peanut butter mug cake
Yield: 1
Prep Time: 5 mins
Cook Time: 2 mins
Total Time: 7 mins
ingredients:
4 tablespoons all purpose flour
4 tablespoons white granulated sugar
1/4 tsp baking powder
1 egg
3 tablespoons peanut butter
3 tablespoons milk
3 tablespoons vegetable oil
4 tablespoons white granulated sugar

directions:
Combine all ingredients in an oversized coffee mug. Whisk well with a small whisk until smooth. Microwave on high for 1 1/2 minutes and then take it out to check to see if it is done. If not, continue to microwave in thirty second intervals. Mine was done at 2 minutes. You don’t want to overcook it or it will become rubbery. You can also make this into two smaller-sized mugs. You can mix the batter all in one mug and then pour half into another mug. Make sure you cook each one individually.

Quinoa Pizza Treats
I've been on a Quinoa kick lately. So when I found this recipe on Pinterest it sounded too good not to try. I of course changed it a bit for what I had on hand and only made half the original recipe.
What You Need:
1 cup cooked Quinoa
1/2 cup chopped turkey pepperoni
1/2 cup shredded mozzarella cheese
1 tbsp grated parmasan cheese
1 tsp Italian seasoning (I used Tuscan Farmhouse from Salt Sisters)
2 eggs
How to Make it:
1. Heat oven to 350 and spray mini muffin tin with cooking spray
2. Mix all ingredients together. Fill muffin tin.
3. Cook for 15 - 20 minutes.
Serve with red pasta sauce or ranch!
I found these to be a fun and tasty treat. I ate some during the super bowl and then heated up more for lunch today. Adding onions and fresh herbs would be good too!
I've also made them in regular muffin size tins for larger portions. I was able to get 7 regular sized muffins out of this recipe. They are great for lunch, a snack or appetizers!

Gluten Free Super Bowl Snacks
It is that time of year again - Super Bowl Sunday! For me this means two things: good commercials and good food. Here are some tasty Gluten Free snacks that would be perfect for Super Bowl watching.
I'm planning on trying to make a Gluten Free version of pigs in a blanket for the game tomorrow. I'll let you know how it goes!
