Medical ID and a Giveaway

Growing up I remember my diabetic grandpa had a huge, metal bracelet he was supposed to wear to let everyone know about his diabetes.   I'm not sure why he never wore it.  The good news is medical bracelets these days have changed!

As a person with a major health condition or allergy, medical ID's can be very valuable.  Recently at a blogger conference I was introduced to a company making medical ID's fun, fashionable and comfortable called American Medical ID.  They were super generous and made us all bracelets for the event.

I wore the bracelet a few days to see if I liked it.  After wearing the bracelet I realized how helpful it would be to state my status to the world as a Gluten Free Celiac.  So after having a blast going through all the options I decided to get the Epic Earth Leather Bracelet with the free engraving "Celiac Disease Gluten Free".  I have found it to be very comfortable and fashionable.  The bracelet came with a cute zipper pouch and a cloth to clean the silver plate.  Pretty handy!

American Medical ID also just came out with a new kids line called Beware Bandits.  They are super cool!  They have Bandits for all kinds of allergies and medical conditions.

Chocolate Soy Butter Cookies

Do you love Nutella but can't have nuts?  I found an awesome alternative!  It is called Don't Go Nuts.  They have created flavored soy butters that are Gluten Free, Peanut Free, Tree Nut Free, Dairy Free and Non-GMO!  They kindly sent me the Chocolate and Cinnamon Sugar to try.


With a jar of Chocolate in hand I decided to create some super easy cookies!  So easy you only need three ingredients.  Yes, I said three!

Weekly Menu November 25, 2013

Happy Thanksgiving week!  Are you all ready for this week's festivities?  Do you have your Gluten Free menu items planned out?  It can be difficult to survive family holiday gatherings as a Gluten Free eater.  Here are some tips that I put together last year. 

We have a busy week with friends and family.  We are having dinner guests Monday and then family gatherings all day Thursday!  Friday will be filled with shopping!



Monday - Crock Pot Lasagna with salad and GF Brownies 


Tuesday - Sausage and peppers served with GF pasta 

Wednesday -  Breakfast for dinner 

Thursday - Thanksgiving!  I'm making a ton so GF side dishes and desserts for all the family gatherings.  Hope to share the recipes soon (hint I'm working on a new cookbook!)

Saturday - Gluten Free Chili and cornbread

Gluten Free Zucchini Fries

Want a fun way to eat zucchini?  Want to get your kids to eat them too?  For some reason when you cut food into sticks it just becomes more fun!  Then if you can dip the sticks in a sauce the fun goes through the roof.  Our family had a blast enjoying these zucchini fries.  After it was all said and done only two remained on the baking sheet.  I call that a win!  Please don't tell my kids the "fries" were actually vegetables.  And yes I trick my kids into eating vegetables.  You got to do what works.




I have tried other recipes but this one is the winner! Here is a super fun recipe for Gluten Free Zucchini Fries.


What You Need:
1/3 cup GF Flour - I used Jules
Salt and pepper
1 egg plus 1 egg white - beaten
1/2 cup of GF bread crumbs - I used Tall Papa
2 zucchini cut into fries

How to Make It:
Heat oven to 350 degrees.  Set out three bowls for your stations.  Put the flour, salt and pepper in one.  Put the eggs in a another and the bread crumbs in the last one.  Cover a baking sheet with parchment paper.  Work the zucchini sticks through the bowls - flour, egg, bread crumbs.  Then place them on the parchment paper.  

Bake for 10 minutes then flip and bake for another 10 minutes.  Serve with the dip of your choice.  I went with ranch!


These were a hit!  I will have to make them more often.  These would be a super fun appetizer too!

Hosting a Gluten Free Toddler Birthday Party

For the twin's second birthday party we decided to have a small party with family at our house.  To make life easier I decided to make the whole party Gluten Free.  My goal was to provide food so yummy no one would know or care that it was all Gluten Free.  

We had 16 people including 7 kids at the party.  It was supposed to last an hour and half.  Three hours later we moved the party to a local restaurant so we could eat lunch!  

What I Served:
- Goldfish Puffs
- Gluten Free pretzel sticks
- A vegetable tray with GF ranch dressing
- Gluten Free cupcakes - used Betty Crocker's mix and followed these instructions for baking
- GF Tortillas chips
- Sausage Cheese Dip - recipe below

The party was a hit!  Everyone ate lots of food.  The cupcakes were downed by all and no one seemed to bat an eye that it was all Gluten Free.  Success!


Sausage Cheese Dip

What You Need
1 lb GF sausage
1 lb Velveeta cheese
1 can of Ro-Tel tomatoes

How To Make It
Cook sausage in a skillet.  Cut up Velveeta cheese and put into a crock pot ( I used our 3 qt).  Pour in the drained can of Ro-Tel and the cooked sausage.  Set the crock pot to low and let cook for at least an hour to allow cheese to melt.  Stir occasionally to mix.  Serve with tortilla chips.

We barely had any of this yummy dip left.  Everyone raved about it and asked for the recipe.  It is so simple to make.  This will easily become a staple at future parties!

The party was 100% Gluten Free and everyone from 2 years old to 76 were happy!

Thankful Tuesday November 19 2013

What are you thankful for?  Are you ready for the holidays?  Have you planned your menus?  Anyone else have a crazy time trying to schedule holiday meals with all parts of your family?  

Ok enough stress.  Here is what I'm thankful for this week:

ONE - The twins.  The blessing of being their mom is overwhelming.  Life is wonderful and chaos all at the same time.  We rejoiced that they are two years old and that we have all survived!

TWO - Gluten Free cupcakes.  There is just something wonderful about being able to enjoy a delicious Gluten Free cupcake.  Whether it is a special occasion or "just because" a cupcake always makes my day!

THREE - Rainbows.  There was a beautiful rainbow outside work on Monday morning.  It was a beautiful reminder as I started my week!

FOUR - Date night.  My amazing Hubby and I ran away Sunday night to celebrate my birthday.  It is so nice to have a quiet dinner with just the two of us.  I am a better person because of this guy.

FIVE - Chronic Positivity Project.  Mary Fran from FrannyCakes is creating 100 days of positivity.  Just go to her site and sign up for the emails.  The project starts tomorrow.  If you need some positive words everyday this is it.  I'm so excited to take this journey!

Weekly Menu November 18 2013


Birthday week in the Jordan house was great!  The twins turned two on Thursday.  We had a fun family celebration that day and had a birthday party on Saturday.  I'll share more later this week about our Gluten Free toddler birthday party!

Sunday was my birthday.  It was filled with friends, church, some kid-free shopping and dinner out with my amazing hubby!  Can't ask for much more than that!

Celebrating Two Years Together with Daisy Cakes

To celebrate the twins 2nd birthday today we made the trip to Durham, NC to Daisy Cakes.  They have the best Gluten Free cupcakes in NC.  Trust me I've tried every Gluten Free cupcake I can get my hands on in the state!  Daisy Cakes is celebrating their two year birthday at their store location so I felt it appropriate that we all celebrate together!







They have recently expanded their Gluten Free menu items.  I'm slowly making my way through the new items.  They have pop tarts, tarts, bread pudding, cookies, biscuits, macaroons, raspberry bars and more. 










Today I tried the Apple Almond Tart.  It was reminiscent of sitting in France at a cafe.  The taste, texture and flavor were just like the European desserts I remember.  The tart was sweet but not too sweet.  The swirl of whip cream was a perfect compliment to the tart.  







While at Daisy Cakes our four year old enjoyed a Gluten-filled brownie and the twins ate mini-cupcakes.  Ok the twins ate the icing off the mini-cupcakes!  It's their birthday so I figured it would be ok. 



We grabbed some full size Gluten Free cupcakes to bring back home.  We will enjoy them during our family birthday party this evening for the twins.  









In other super exciting news Daisy Cakes has just come out with a Gluten Free flour.  Equal Measure is a cup for cup Gluten Free Flour Mix!  I of course grabbed a bag and can't wait to get baking!  I can only hope my cupcakes will be close to theirs since I will be using their flour mix.  The flour mix is corn starch and brown rice flour based.  



If I can swing it we will go back Sunday so I can get a Gluten Free cupcake on my birthday!!!

Thankful Tuesday

With Thanksgiving coming up I though I would share some things I'm thankful for and some random life updates.  If you follow me on Instagram than you are probably aware of most of these things.  For all you other readers here you go! 

First: I LOVE footie pajamas!  I can never find any in my size so I force the kids to wear them.  Here are the twins in them this weekend.  Aren't they the cutest feet?!  Ok - yes I'm biased!

Second: Have you noticed food cooked on an open flame tastes better?  We spent Saturday night at a friend's farm and cooked hot dogs, chicken tenders and s'mores.  The best hot dogs are the ones that have a touch of black on them from fire.  I planned poorly and left my GF graham crackers at home so I had s'mores minus the cracker.  However a nicely toasted marshmallow between two pieces of chocolate does hit the spot.  Here are two brands of graham crackers I use: Schar and Kinnikinnick.

Third: I'm loving Erica from Celiac and the Beast's new book.  She is cracking me up!  I love her 100% honesty and crazy stories.  If you ever want to read a hilarious story of one girl's relationship with Celiac Disease this one is it!  Once I finish it I'll do a full review.  As a preview she talks about farting in public as well as pooping your pants.  As a Celiac I can relate to those :)  Erica drank red wine while writing it so I felt it fitting to drink red wine while reading it.  At one point I laughed so hard I spit some on the book.  I know Erica is proud!  I'm also sporting one of her awesome tanks in this picture.  You can buy them on her site

Fourth: I love our community!  There is so much support and love among people with food allergies and Celiac Disease.  I would be so lost without you all!  Thank you so much!

And Fifth: I had a friend have a breast cancer scare this week.  As a community of friends we prayed for good news.  She texted me yesterday with this... (the green is me)

To celebrate the kids and I dropped off a bottle of bubbly at her house last night.  I don't know where you are spiritually but I believe in prayer.

Toufayan Bakeries Gluten Free Wraps

Are you looking for a Gluten Free wrap that bends without breaking? Isn't too thick?  Has a good flavor and cooks well?  I made a recent discovery at Wal-Mart that fulfills all these requirements.  Toufayan Bakeries has created these awesome Gluten Free wraps.  I found the plain GF wraps up front by the deli.  We have bought them a few times and have really enjoyed them.

A few weeks ago Toufayan Bakeries contacted me and wanted me to try their new flavors.  They sent a box full of their yummy wraps.  The flavors include: plain, garden vegetable, spinach and savory tomato.  

Our family has had a blast eating these wraps.  My favorite is the garden vegetable and the kids really like the plain.  

Here are some ways we ate them:

Fajitas

Sandwich Wrap

The highlight was making grilled quesadillas.  These wraps held up perfectly to the high heat, held together and tasted great!

Weekly Menu November 11 2013


It' birthday week at our house!!  The twins turn two on Thursday.  So glad we survived this long and so blessed they are healthy and happy!  My big 33rd birthday hits next weekend.  Our week will be filled with Gluten Free baked goods, parties and presents!
