Gluten Free Corn Dog Muffins

Corn Dogs = yummy!   I have seen a couple Gluten Free corn dog recipes that were more traditional but this recipe caught my eye.  The only change to make it Gluten Free was to use Gluten Free corn mix.

What you need:
GF Corn muffin mix (I used Bloomfield Farms mix!)
3 hot dogs

How to Make it:
Heat oven to 400 degrees.  Spray mini-muffin pan with cooking oil.  Mix corn muffin mix as directed.  I followed the directions to make 6 regular size muffins and it was perfect to make 16 mini-muffins.  Cut hot dogs into small 1 inch pieces (I had 6 pieces per hot dog).  Fill muffin tins half full with corn mix and place hot dog in the center.

Bake at 400 for 9 minutes.  Serve with the dip of your choice.

Tips:
Do not overfill the tins, once you put in the hot dog the corn mix will be the right height.  Cut off the rounded ends of the hot dogs so the pieces will stand up better.  You could easily increase this recipe to meet your needs.
