Easy Gluten Free Peach Cobbler

Here in the South, cobbler is a staple at most restaurants and homes.  I can barely remember a gathering of people that didn’t have cobbler.  The fruit in the cobbler does vary from blackberries, cherries, blueberries, strawberries but the most popular is of course PEACH COBBLER!

This warm pile of goodness is perfect to finish off almost any meal.  It is best served warm with vanilla ice cream on top.

I have found that true cobbler connoisseurs differ on how they like the dough, runny or firm.  I personally like it both ways.

We have made this peach cobbler a number of times for guests and as a fun summer dessert for our own family.  If you have any leftovers they can be refrigerated and heated up later, notice I said “if”.

This recipe is super easy, super fast and Gluten Free.  To prove how easy it is I had our 3 kiddos make our Peach Cobbler today.  I did help with the egg and the oven, but the rest was all them!

What You Need:

1 cup white sugar

1 cup Gluten Free flour mix

1 egg

1/2 cup milk

1/2 tsp of cinnamon/ sugar mixture or Faith seasoning

16 oz of frozen peaches

How To Make It:

Heat the oven to 400 degrees.  In a large bowl combine all the ingredients except for the peaches.  Stir the dough together.  It should be thick.  Pour the peaches into a casserole dish.  Pour the dough on top of the peaches and spread with a spoon so all the peaches have some dough on them.  Bake for 35 to 40 minutes depending on how you like your dough.

Let cool 10 minutes then serve with ice cream.

You could easily use this recipe with any of your favorite fruits.  Feel free to experiment.

Enjoy!

That looks really good! I like mixing some blueberries or raspberries in with the peaches to change it up a bit. I may have to make some soon!

This looks delicious! Saving for future use. Just out of curiosity, have you tried it with something like rice milk and an egg replacer such flaxseed? Thanks for sharing!

Is flour mix like gluten free bisquick or is it regular gluten free flour?

I use a GF flour baking mix, bisquick would do fine for this recipe.
