The Essential Gluten-Free Cookie Guide

If you struggle to bake good Gluten Free cookies, I’ve found the cookbook for you.  Brianna Hobbs from Flippin’ Delicious has come out with an awesome cookbook for all of us that are cookie challenged!  The Essential Gluten-Free Cookie Guide has over 50 recipes and mind blowing tips for successful Gluten Free baking.

Since Brianna rocks, she is letting me share one of her recipes from the book.  As I drooled through the pages I stopped at page 40 – BACON COOKIES!  So brilliant!  I have tried bacon cookies before and being a bacon addict I loved them.  I have some bacon in the freezer just calling to be made into cookies!

Bacon Cookies from The Essential Gluten-Free Cookie Guide

Yield: 2 dozen

Ingredients

  • 1/4 cup butter, melted
  • 1/4 cup bacon fat (from bacon in recipe)
  • 1/2 cup + 3 tbsp firmly packed brown sugar
  • 2 egg yolks
  • 1/2 tsp xanthan gum
  • 1/2 tsp baking soda
  • 1 tsp vanilla
  • 1 1/2 cups + 2 tbsp GF cookie flour blend
  • 1/2 pound bacon, cooked until crisp, and crumbled
  • (optional) 3/4 cup chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.
  2. Cream together the melted butter and brown sugar. Add the egg yolks and mix until combined. Add the baking soda, xantham gum, and vanilla, and mix until combined.
  3. Add the flour, and mix until incorporated. Then mix in the chocolate chips (optional) and the crumbled bacon.
  4. Scoop using a 1 1/2 tbsp cookie scoop and place cookies 4 inches apart on the prepared baking sheet.
  5. Bake for approximately 10 minutes. The cookies should spread and will lose their doughy shine, but will still be very soft. Allow to cool on the baking sheet for a few minutes before moving to a cooling rack to finish cooling.
