Brown Sugar Bacon Wrapped Pork Loin

What goes well with pork? More pork! Bacon is one of my favorite food groups and whenever I can pair it with more pork I’m in “hog” heaven.

Impress your guests with this simple Gluten Free pork recipe

Brown Sugar Bacon Wrapped Pork Loin is a simple recipe that makes a beautiful and fancy dish. This would be a great dish to make for summer guests.

Since bacon has a wonderful salty flavor I thought that brown sugar would be a perfect compliment.  This dish is naturally Gluten Free as long as you use GF bacon, which all of the major name brands are but always read the label just in case.

Gluten Free Brown Sugar Bacon Pork Loin

Brown Sugar Bacon Wrapped Pork Loin

Prep Time: 10 minutes

Cook Time: 45 minutes

Total Time: 55 minutes

Ingredients

  • 2 tbsp vegetable oil
  • 2-3 lb pork tenderloin
  • salt and pepper
  • 1/2 cup brown sugar
  • 10 slices of GF bacon

Instructions

  1. Heat the oil in a skillet over medium high heat.
  2. Rinse the pork loin and pat dry. Heavily season with salt and pepper.
  3. Once the oil is hot, cook the pork loin on each side for 3 minutes.
  4. Remove the skillet from the heat and let rest for 10 minutes.
  5. Heat the oven to 375 degrees.
  6. Cover the top of the pork loin with brown sugar.
  7. Wrap the sugar covered pork loin with bacon slices.
  8. Place into oven safe skillet or casserole dish.
  9. Bake for 40 minutes.
  10. Let rest for 10 minutes before you slice and serve.

Two wonderful side benefits of this dish: one is the house smells AWESOME and two the excess bacon/ brown sugar fat that you can save to flavor future dishes. Cook some eggs in a little bit of this bacon fat goodness, you can thank me later for that one!

This dish will be made many times this summer! I even plan to cook it on the grill. I’ll let you know how it goes.
